Notas sobre bacterias coliformes en el camarón Heterocarpus reedi Bahamonde

Coliform bacteria were minimal in shrimp analized just after capture. Samples stored, immediately after capture during 13 hours in a sterilized flask surrounded with ice showed a maximum of 13 x 10³ psycrotrophic viable bacterial cells per gram and a minimum of 1.5 x 10³. On the other hand samples not stored in ice revealed a minimum of 8 x 10⁵ and a maximum of 3 x 10⁶ psycrotrophic viable bacterial cells per gram. For improving the quality of the product the authors recommend the use of ice immediately after capture.
